Xadrez Chicken with Sesame Oil Ingredients 500g diced chicken breast 1 small diced yellow bell pepper 1 small diced orange bell pepper 1 small diced red bell pepper 1 medium diced onion 2 minced garlic cloves 3 tablespoons soy sauce (or to taste) 1 tablespoon cornstarch ½ cup water Salt and pepper to taste 1 tablespoon regular oil (soybean, canola, or olive) 1 teaspoon toasted sesame oil 3 tablespoons unsalted roasted peanuts 1 tablespoon toasted sesame seeds Preparation Season the chicken Season the chicken cubes with salt, pepper, and a drizzle of soy sauce. Brown the chicken Heat the regular oil in a large skillet or wok. Brown the chicken until cooked through and lightly browned on the outside. Remove and set aside. Sauté the vegetables: In the same pan, add the garlic, onion, and peppers. Sauté over high heat for a few minutes, until softened but still crunchy. Sauce: Dissolve the cornstarch in cold water and mix with the soy sauce. Pour into the pan and stir until the sauce thickens slightly. Finish: Return the chicken to the pan and mix well. Drizzle with the toasted sesame oil. Add the peanuts and finish with the toasted sesame seeds.
